Healthy Banana Pancakes

Yesterday I had a bit more time to spend on making something for breakfast, so instead of my normal eggs and banana (as seen here) I decided to do something different. Cassey of Blogilates, a food & fitness blogger, posted a video on how to make delicious banana pancakes (here). I've changed it up ever so slightly and it is so good. I had to share it with you guys.

The only two ingredients you will need for this are a banana and an egg. Cassey uses two eggs in her recipe, but people warned that it tastes more like a banana omelette with two in there. This will make about two medium sized pancakes, but do keep in mind that I used a smaller banana here.


Slice up the banana and crack the egg into one bowl, and mix the two together. You'll still have some pieces of banana that haven't been completely mixed in, but don't worry too much about it.

Then, just start cooking like you would if you were making a normal pancake. I've discovered that I am terrible at flipping these.

I topped mine off with some strawberries for some extra sweetness, but they do taste good on their own. Let me know if you try these out! Enjoy!
